These creepy little bites are fun, festive, and just the right amount of eerie to fit in with your Halloween spread. The combination of juicy cherry tomatoes, creamy mozzarella, and a touch of balsamic glaze is a flavor explosion that’s impossible to resist.

  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini)
  • 1/2 cup black olives, pitted and sliced into rounds
  • 1/4 cup balsamic glaze
  • 1 bunch fresh basil leaves
  • 12 wooden or metal skewers

Instructions

  1. Slice the cherry tomatoes in half lengthwise. Cut the mozzarella balls in half if they’re larger than the tomatoes. Slice the black olives into thin rounds.
  2. Place a slice of black olive onto the center of a mozzarella ball half to create the ‘eyeballs.’ Press lightly to secure it in place. Repeat until you have enough eyeballs for your skewers.
  3. Start with a basil leaf, fold it in half, and slide it onto the skewer. Add one ‘eyeball’ by skewering through the mozzarella and olive. Follow with half a cherry tomato, flat side facing the ‘eyeball,’ to give it a creepy look.
  4. Continue the pattern (basil leaf, eyeball, tomato) until your skewer is full. Leave enough space at the bottom for handling.
  5. Drizzle balsamic glaze over the finished skewers to create a ‘bloody vein’ effect. Use a small spoon or a squeeze bottle for precision.
  6. Place the skewers on a platter and refrigerate for about 15 minutes before serving to let them firm up and allow the flavors to meld.

Notes

Chill the skewers before serving to keep the mozzarella firm and refreshing. Use Halloween-themed skewers for extra flair. You can customize the recipe with vegan cheese or other ingredients like jalapeño cheddar cheese balls or roasted pumpkin cubes.
