  • 2 cups (400 g) black sushi rice
  • 2 ½ cups (600 ml) water
  • 3 tablespoons (45 ml) rice vinegar
  • Nori sheets
  • Fresh salmon or tuna, sliced into thin strips
  • Avocado, cut into matchstick-sized pieces
  • Cucumber, cut into matchstick-sized pieces
  • Cream cheese, softened
  • Sriracha
  • Sesame seeds (black and white)
  • Optional spooky decorations: edible eyes, squid ink, thinly sliced carrots

Instructions

  1. Rinse 2 cups (400 g) of black sushi rice under cold water until the water runs clear. Cook the rice in a rice cooker with 2 ½ cups (600 ml) of water. Once cooked, let it cool slightly and mix in 3 tablespoons (45 ml) of rice vinegar.
  2. Slice the salmon or tuna into thin strips. Cut avocado and cucumber into matchstick-sized pieces. Keep the cream cheese soft and ready for spreading.
  3. Use cookie cutters to slice carrots into jack-o’-lantern or bat shapes. If using edible eyes, have them ready to garnish your rolls.
  4. Place a nori sheet shiny side down on your bamboo mat. Spread a thin layer of black sushi rice over the nori, leaving a 1-inch (2.5 cm) border at the top.
  5. Arrange the salmon or tuna, avocado, cucumber, and cream cheese in a horizontal line across the center of the rice.
  6. Using the bamboo mat, roll the sushi tightly, applying gentle pressure to seal the edges. Use a bit of water on the exposed nori edge to ensure it sticks.
  7. Using a sharp knife, slice the roll into 8 pieces. Garnish with spooky decorations like edible eyes, sriracha “blood,” or sesame seeds.
  8. Continue making rolls until all ingredients are used. Experiment with different spooky designs for variety!
