  • 3 cups cooked white rice

  • 1 cup diced yellow onion

  • 1 tablespoon Cajun seasoning
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish
  • Optional: hot sauce for extra heat
  • Optional: diced andouille sausage for smoky flavor

Instructions

  1. Dice bell peppers, celery, and onion. Mince garlic and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a wooden spoon (about 5-7 minutes). Drain excess grease if needed.
  3. Add another tablespoon of olive oil to the skillet. Toss in diced onion, celery, and bell peppers. Cook until softened, about 5 minutes. Add minced garlic and cook for 1 more minute, stirring frequently.
  4. Sprinkle Cajun seasoning, salt, and pepper over the veggies. Stir to coat evenly.
  5. Return cooked ground beef to the skillet, mixing it with the seasoned veggies.
  6. Stir in cooked white rice, breaking up any clumps. Pour in chicken broth and mix well. Lower heat to medium-low.
  7. Let the mixture cook uncovered for 10-15 minutes, stirring occasionally, until the flavors meld and the rice absorbs the broth.
  8. Taste and adjust seasoning if needed. Garnish with chopped parsley and serve warm.
