Crispy, cheesy puff pastry twists filled with fresh spinach and sharp Parmesan, perfect for quick snacks or appetizers.

  • 2 sheets puff pastry (thawed if frozen)
  • 4 cups fresh spinach (loosely packed)
  • 1 cup grated Parmesan cheese
  • 1 large egg (beaten)
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Heat olive oil in a skillet over medium heat. Add fresh spinach and cook until wilted and most moisture evaporates, about 3-4 minutes. Remove from heat and cool slightly.
  3. Drain excess liquid from spinach using a clean kitchen towel or fine sieve.
  4. In a mixing bowl, combine drained spinach, grated Parmesan, garlic powder, salt, and black pepper. Stir well.
  5. On a lightly floured surface or parchment paper, unfold puff pastry sheets. Roll gently if needed to smooth out creases, aiming for a 12×12 inch square per sheet.
  6. Spread half of the spinach and Parmesan mixture evenly over one pastry sheet, leaving a small border around edges.
  7. Place the second pastry sheet on top and gently press down to seal the filling inside. Lightly press with rolling pin to fuse layers without squeezing out filling.
  8. Cut the layered pastry into 1-inch wide strips using a sharp knife or pizza cutter. Twist each strip a few times to create spirals and place on the prepared baking sheet with space between each twist.
  9. Brush each twist with beaten egg for a golden crust.
  10. Bake for 15-18 minutes until puffed, golden brown, and crisp.
  11. Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely or serve warm.

Notes

Squeeze out excess moisture from spinach to avoid soggy pastry. Let puff pastry rest at room temperature before cutting if too cold. Do not overcrowd baking sheet to allow even puffing and crisping. Use egg wash for golden crust. Reheat in oven to maintain crispiness; avoid microwave.
