A golden, buttery grilled cheese sandwich with creamy avocado, melty mozzarella, and fresh tomatoes. Perfect for a quick lunch or satisfying dinner.

  • 1 ripe avocado, mashed or sliced
  • 4 ounces fresh mozzarella, sliced
  • 12 Roma or heirloom tomatoes, sliced
  • 2 slices thick-cut sourdough bread
  • 1 tablespoon unsalted butter
  • Salt and pepper, to taste
  • Optional: Fresh basil leaves

Instructions

  1. Slice the tomatoes and mozzarella into thin pieces. Mash the avocado if preferred spreadable, or slice it for more texture. Season the avocado lightly with salt and pepper.
  2. Spread a thin layer of butter on one side of each bread slice. This will be the outside that gets toasted.
  3. On the unbuttered side of one slice, layer the avocado, mozzarella slices, and tomato. Add basil leaves if using. Top with the second slice of bread, buttered side facing out.
  4. Place a skillet over medium heat and let it warm up for about 2 minutes.
  5. Place the assembled sandwich in the skillet. Cook for 3-4 minutes on one side, pressing down gently with a spatula. Flip carefully and cook the other side for another 3-4 minutes, or until the bread is golden brown and crispy.
  6. Ensure the mozzarella is melted before removing the sandwich from the skillet. If needed, lower the heat and cook for an additional minute on each side.
  7. Transfer to a plate, slice in half, and serve warm.
