A cozy and hearty soup that combines all the comforting flavors of classic lasagna—savory tomato sauce, gooey cheese, and tender pasta—in an easy one-pot recipe.

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 yellow onion, finely chopped
  • 4 cloves garlic, freshly minced
  • 28 oz crushed tomatoes
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon. Drain any excess grease and set aside.
  2. In the same pot, add another tablespoon of olive oil and sauté the onions until softened, about 5 minutes. Add the minced garlic and stir for 1 minute until fragrant.
  3. Stir in the crushed tomatoes, tomato paste, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat to a simmer.
  4. Let the soup simmer for 20 minutes, stirring occasionally to ensure the flavors meld.
  5. Add the broken lasagna noodles to the pot and cook until tender, about 10 minutes. Stir frequently to prevent the noodles from sticking to the bottom.
  6. Stir in the ricotta cheese and half of the mozzarella until melted and creamy. Taste and adjust seasoning if needed.
  7. Ladle the soup into bowls and top with the remaining mozzarella, Parmesan, and fresh parsley. Serve hot and enjoy!
