  • 1 teaspoon garlic powder
  • Kosher salt to taste (about 1 ½ teaspoons)
  • Freshly cracked black pepper to taste (about 1 teaspoon)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the pork shoulder or loin dry with paper towels. Trim any large excess fat if desired.
  3. In a mixing bowl, drizzle 2 tablespoons of olive oil over the pork. Sprinkle 1 teaspoon garlic powder, kosher salt (about 1 ½ teaspoons), and freshly cracked black pepper (about 1 teaspoon). Rub the seasoning all over the roast evenly.
  4. Place the roast on a rack in your roasting pan. If you don’t have a rack, place it directly in the pan and plan to turn halfway through cooking.
  5. Roast the pork for about 20 minutes per pound (45 minutes per kilogram). For a 3-pound roast, cook approximately 1 hour and 15 minutes. Check internal temperature aiming for 145°F (63°C).
  6. Remove from oven and tent loosely with foil. Let rest for 10-15 minutes to allow juices to redistribute.
