  • ¼ cup cornstarch (30 g)
  • 1 large egg, beaten
  • Cooking spray or oil for air fryer basket
  • ½ cup mayonnaise (120 ml)
  • 2 tbsp sweet chili sauce (30 ml)
  • 1 tbsp sriracha (15 ml)
  • 1 tsp honey or sugar (5 ml)
  • 1 tsp rice vinegar or lime juice (5 ml)
  • Optional garnish: chopped green onions, sesame seeds, or fresh cilantro

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In a bowl, whisk together ½ cup all-purpose flour and ¼ cup cornstarch.
  3. In a separate bowl, lightly beat 1 large egg until combined.
  4. Dip each shrimp first in the egg, then dredge in the flour-cornstarch mixture. Shake off excess coating.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Spray the air fryer basket lightly with cooking spray or brush with oil. Place shrimp in a single layer without overcrowding; cook in batches if needed.
  7. Air fry shrimp for 6-8 minutes, flipping halfway through, until golden brown and firm.
  8. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar or lime juice until smooth.
  9. Transfer cooked shrimp to a large bowl and gently toss with the bang bang sauce until evenly coated.
  10. Garnish with chopped green onions, sesame seeds, or cilantro if desired and serve immediately.

Avoid overcrowding the air fryer basket to ensure shrimp crispiness. Pat shrimp dry before coating for better adhesion. Adjust sriracha to taste for desired spice level. For extra crispiness, air fry uncovered for 1-2 minutes after tossing with sauce, watching carefully to avoid burning.
