  • Small to medium yellow or white onions (3 to 4 inches in diameter)
  • 1 cup all-purpose flour (unbleached preferred)
  • 1/4 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (pinch)
  • 2 large eggs, beaten
  • 1/2 cup buttermilk or milk (can substitute dairy-free milk)
  • Cooking spray or light oil mist
  • Optional dipping sauce: 1/4 cup mayonnaise, 2 tbsp ketchup, 1 tsp horseradish, pinch of smoked paprika or hot sauce

Instructions

  1. Peel each onion and trim off the top to create a flat surface. Place onion cut side down and slice into 8 equal petals, stopping about 3/4 inch from the root to keep petals connected. Gently separate petals to form the bloom.
  2. In a large bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Stir well.
  3. In another bowl, whisk together eggs and buttermilk or milk.
  4. Dip each onion into the wet mixture, making sure it seeps between petals. Let excess drip off, then dredge in the flour mixture, pressing lightly to coat petals. Repeat wet and dry dip for extra crunch if desired. Place coated onions on a plate.
  5. Preheat air fryer to 375°F (190°C) for 3-5 minutes.
  6. Spray air fryer basket with cooking spray. Place onions upright in basket spaced apart. Lightly mist tops with cooking spray.
  7. Air fry at 375°F (190°C) for 12-15 minutes, flipping halfway through, until golden brown and crispy. Cook in batches if needed.
  8. Optional: Mix mayonnaise, ketchup, horseradish, and smoked paprika or hot sauce to make dipping sauce.
  9. Remove onions carefully with tongs and serve warm with dipping sauce.

Notes

Keep onion petals connected at the root to prevent falling apart. Use cooking spray lightly for golden crispiness. Flip onions halfway through cooking. If air fryer is small, cook in batches to avoid overcrowding. Preheat air fryer for best results. For gluten-free option, substitute almond flour or gluten-free flour blend. Baking alternative: bake at 425°F (220°C) on wire rack for 20-25 minutes, flipping halfway.
