A quick and easy BBQ chicken flatbread pizza combining smoky barbecue sauce, tender chicken, and melted cheese on a crispy flatbread, perfect for a satisfying weeknight dinner.

  • 2 medium-sized flatbreads (810 inches each), stone-baked or whole wheat recommended
  • 2 cups shredded or chopped cooked chicken breast or thigh (grilled or rotisserie)
  • 3/4 cup smoky barbecue sauce (e.g., Sweet Baby Ray’s), plus 1 teaspoon honey if desired
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons fresh cilantro, roughly chopped
  • 1 tablespoon olive oil
  • Optional toppings: sliced jalapeños, diced bell peppers, smoked paprika

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the chicken with about 1/2 cup of the BBQ sauce in a mixing bowl until evenly coated.
  3. Brush each flatbread lightly with olive oil on one side and place oiled side down on a baking sheet.
  4. Spread about 2 tablespoons of the remaining BBQ sauce over the top of each flatbread.
  5. Distribute the sauced chicken evenly over the sauce layer.
  6. Scatter sliced red onions over the chicken, then sprinkle the cheese blend generously on top.
  7. Bake for 10-12 minutes until the cheese is melted, bubbly, and lightly golden. Watch closely after 10 minutes to avoid burning.
  8. Once out of the oven, sprinkle fresh cilantro over each flatbread before serving.

Notes

Brush the underside of the flatbread with olive oil to keep crust crispy and prevent sogginess. Do not overload with sauce or toppings to avoid soggy crust. Use pre-cooked rotisserie chicken for convenience. For extra crispiness, move flatbread to the top rack for the last 2 minutes of baking and watch carefully.
