  • 1 tablespoon milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Cream the butter and brown sugar in a large bowl using an electric mixer until fluffy and light in color, about 3 to 4 minutes.
  2. Add the egg and vanilla extract; mix until fully combined and silky, about 1 minute.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing on low speed just until the dough starts to come together. If too crumbly, add milk 1 teaspoon at a time.
  5. Flatten the dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  6. Roll the chilled dough on a lightly floured surface to about ¼ inch thickness. Cut into rectangles approximately 3 x 2 inches.
  7. Place half of the rectangles on a parchment-lined baking sheet. Spoon about 1 teaspoon of jam in the center of each, spreading slightly but not to the edges.
  8. Brush edges with water, place the second rectangle on top, and gently press edges to seal.
  9. Prick the tops of each cookie with a fork a few times to vent steam. Chill assembled cookies in the fridge for 15 minutes.
  10. Preheat oven to 350°F (175°C). Bake cookies for 15-18 minutes until edges are golden and tops set.
  11. Cool cookies completely on a wire rack before glazing.
  12. Mix powdered sugar, milk, and vanilla extract until smooth for the glaze. Adjust milk for desired thickness.
  13. Drizzle or spread glaze on cooled cookies and let set for 10-15 minutes before serving.
