Buffalo Chicken Stuffed Shells

A spicy, creamy, and easy-to-make game day dish featuring jumbo pasta shells stuffed with a mixture of rotisserie chicken, cream cheese, and buffalo sauce, then baked with mozzarella.

  • 1215 jumbo pasta shells
  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 8 oz cream cheese, softened to room temperature
  • 1/2 to 3/4 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook jumbo pasta shells according to package directions but remove 1-2 minutes before fully tender (al dente). Drain and rinse with cold water to stop cooking.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Add the shredded chicken, buffalo sauce, garlic powder, salt, and pepper. Mix until the chicken is evenly coated in the spicy cheese mixture.
  3. Spoon about 2-3 tablespoons of the filling into each shell. Place stuffed shells seam-side down in a greased 9×13 inch baking dish.
  4. Sprinkle shredded mozzarella cheese evenly over the top of the stuffed shells. Optionally drizzle with extra buffalo sauce.
  5. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is bubbly and slightly golden.
  6. Let the dish rest for 5 minutes before serving to allow the filling to set.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Do not overcook the pasta shells as they will continue to cook in the oven. For a lighter version, use less cheese and more chicken. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
