  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups beef broth (low-sodium recommended)
  • 1 cup whole milk
  • 1 ½ cups elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Optional toppings: chopped pickles, diced tomatoes, crispy bacon bits

Instructions

  1. Heat a large heavy-bottomed pot over medium-high heat. Add ground beef, breaking it apart with a spoon. Cook until browned and no longer pink, about 8-10 minutes. Drain excess fat if too greasy, leaving some for flavor.
  2. Push the beef to one side of the pot. Add chopped onions with a pinch of salt to the empty side. Cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Stir in tomato paste and Worcestershire sauce. Cook for 1-2 minutes to deepen flavors.
  4. Pour in beef broth and bring the mixture to a boil, about 5 minutes.
  5. Add elbow macaroni, reduce heat to medium-low, cover loosely, and simmer for 8-10 minutes until pasta is tender but firm, stirring occasionally to prevent sticking.
  6. Lower heat to medium-low. Slowly stir in milk, then add shredded cheddar cheese in batches, stirring constantly until melted and soup is creamy, about 5 minutes.
  7. Add Dijon mustard, salt, and black pepper to taste. If soup is too thick, add a splash of broth or milk to reach desired consistency.
  8. Serve warm with optional toppings such as chopped pickles, diced tomatoes, or crispy bacon bits.

Notes

Add cheese gradually while stirring to prevent clumping. Use freshly shredded cheese for best melting. Temper milk by adding slowly over moderate heat to avoid curdling. Stir occasionally while macaroni cooks to prevent sticking. Adjust seasoning after adding cheese.
