  • 3/4 cup (170 g) unsalted butter, softened
  • 1 cup (200 g) packed brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270 g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar using a mixer until light and fluffy, about 3-4 minutes.
  3. Beat in the large room-temperature egg and vanilla extract until fully incorporated and glossy.
  4. Stir in the active, bubbly sourdough starter discard. The mixture may look loose but will come together.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually mix the dry ingredients into the wet mixture on low speed or fold with a spatula until just combined. Avoid overmixing.
  7. Gently fold in the semi-sweet chocolate chips until evenly distributed.
  8. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes, or until edges are golden but centers look slightly underbaked for chewy texture.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
