  • 1 cup (240 ml) sour cream (full-fat recommended)
  • 1/2 cup (115 grams) butter, melted
  • 2 cups (200 grams) sharp cheddar cheese, shredded
  • 34 green onions, chopped
  • 1 can (10.5 oz / 298 grams) condensed cream of chicken soup
  • 1 cup (50 grams) French fried onions
  • Salt and pepper to taste
  • Additional 1 cup (50 grams) French fried onions for topping
  • Optional: pinch of paprika or smoked paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine frozen shredded hash browns, sour cream, condensed cream of chicken soup, melted butter, shredded sharp cheddar cheese, and chopped green onions. Season with salt and pepper to taste. Fold gently with a spatula until evenly combined, being careful not to overmix.
  3. Transfer the mixture to a 9×13-inch baking dish and spread evenly, pressing down lightly to compact without squishing.
  4. Sprinkle about 1 cup of French fried onions evenly over the top. Optionally toss them with melted butter or a pinch of paprika for extra flavor.
  5. Bake uncovered for 45-50 minutes until bubbly around the edges and the topping is golden brown and crisp. Tent with foil if the topping browns too quickly.
  6. Let the casserole rest for 10 minutes before serving to set and maintain creamy texture.
