  • 1 bay leaf

Instructions

  1. Slice the onions thinly and cut the beef into roughly 1-inch (2.5cm) cubes. Mince the garlic and set aside.
  2. Heat butter and olive oil over medium-low heat in a large heavy-bottom pot or Dutch oven. Add sliced onions and a pinch of salt. Cook slowly, stirring frequently, for 25-30 minutes until deep golden brown and fragrant.
  3. Push onions to the side, increase heat to medium-high, and brown beef pieces in batches for 5-7 minutes per batch until nicely seared on all sides.
  4. Stir in minced garlic and cook for 1 minute until fragrant. Sprinkle flour over beef and onions, stirring constantly to coat evenly. Cook for 2 minutes to remove raw flour taste and form a roux.
  5. Slowly pour in beef broth, scraping the bottom of the pot to lift browned bits. Add Worcestershire sauce, thyme, bay leaf, salt, and pepper. Stir well.
  6. Bring mixture to a gentle boil, then reduce heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until beef is tender and gravy thickens.
  7. Taste and adjust salt and pepper as needed. Remove bay leaf.
  8. Serve beef and onion gravy over creamy mashed potatoes, buttered noodles, or rice. Garnish with fresh parsley if desired.
