  • 1 green bell pepper, diced (optional)
  • Sliced smoked sausage (optional)
  • Salt and black pepper to taste
  • Chopped fresh parsley or green onions for garnish

Instructions

  1. Peel and cube potatoes into roughly 1-inch pieces. Dice onion, mince garlic, slice smoked sausage if using, and chop green bell pepper if adding. Prep time about 10-15 minutes.
  2. Add potatoes, onion, garlic, green bell pepper, sliced sausage, and Cajun seasoning to the crockpot. Pour in chicken broth and stir gently to combine. Season lightly with salt and pepper.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are tender.
  4. Remove about one-third of the soup and blend until smooth using an immersion blender or regular blender. Stir blended soup back into the crockpot.
  5. Stir in heavy cream and butter. Cook for another 15-20 minutes on low to heat through and thicken slightly. Adjust seasoning as needed.
  6. Ladle soup into bowls and garnish with chopped parsley or green onions. Serve warm.

Notes

Blend about one-third of the soup to achieve creamy texture while keeping chunks. Adjust seasoning gradually to control spice level. Use room temperature cream and butter to avoid curdling. If soup is too thick after cooking, add extra broth or water to reach desired consistency. For vegetarian version, omit sausage and use vegetable broth with smoked paprika or liquid smoke for flavor. Can substitute heavy cream with half-and-half or coconut milk for dairy-free option.
