  • 1 pound Spanish chorizo, sliced into coins
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized cubes
  • 12 ounces (340 grams) penne or rigatoni pasta
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup freshly grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Prep ingredients: Cut chicken into 1-inch cubes and season with salt and pepper. Dice onion, mince garlic, and slice chorizo.
  2. Heat olive oil and butter in a large heavy-bottomed pot over medium heat. Add diced onion and cook for 3-4 minutes until translucent.
  3. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.
  4. Push onions to the side and add chicken cubes. Cook for 5-6 minutes until browned and cooked through. Remove chicken and set aside.
  5. In the same pot, add sliced chorizo and cook for 3-4 minutes until it releases red oils and crisps slightly.
  6. Pour in chicken broth and heavy cream, scraping up browned bits from the bottom. Add uncooked pasta, Italian seasoning, and the browned chicken back to the pot. Stir to combine.
  7. Bring to a boil, then reduce heat to low. Cover and simmer for 10-12 minutes until pasta is al dente. Add a splash of broth if too dry.
  8. Remove from heat and stir in grated parmesan cheese until melted and sauce is smooth.
  9. Taste and adjust seasoning with salt or pepper. Garnish with fresh parsley before serving.

Notes

Use cured Spanish chorizo, not raw Mexican chorizo, for the best texture and flavor. Ensure chicken is cut evenly for consistent cooking. Do not skip browning the chicken for added flavor. If the sauce is too thick, add more broth or cream. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently with a splash of milk or broth.
