A quick and easy creamy cold spinach dip that is perfect for parties and casual get-togethers, combining fresh spinach with cream cheese, sour cream, and a hint of garlic for a flavorful, crowd-pleasing appetizer.

  • 10 oz frozen chopped spinach, thawed and well-drained
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise (can substitute Greek yogurt for lighter version)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves minced garlic
  • 2 tablespoons finely chopped green onions
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Thaw frozen spinach completely, then transfer to a fine mesh strainer or wrap in cheesecloth and squeeze out as much liquid as possible (about 5 minutes).
  2. Soften the cream cheese by letting it sit at room temperature for 15-20 minutes or microwaving in short bursts (5-10 seconds) until soft but not melted.
  3. In a mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Blend with an electric mixer or whisk until smooth and fluffy (2-3 minutes).
  4. Stir in minced garlic, grated Parmesan, chopped green onions, and lemon juice until evenly distributed.
  5. Fold in the well-drained spinach gently with a spatula until uniformly combined and thick without watery bits.
  6. Season with salt and freshly ground black pepper to taste and stir well.
  7. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2-3 hours, to allow flavors to meld and dip to thicken.
  8. Before serving, stir gently and transfer to a serving bowl. Serve with pita chips, fresh veggies, or crackers.

Notes

Drain spinach thoroughly to avoid watery dip. Soften cream cheese properly for smooth texture. Chill dip for at least 1 hour to meld flavors. Adjust thickness by adding milk or sour cream if too thick, or more cream cheese or Parmesan if too thin. Use fresh garlic for best flavor. Can substitute fresh sautéed spinach for frozen. Not recommended to freeze.
