  • 4 tablespoons unsalted butter, divided
  • 4 cloves fresh garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 1 tablespoon fresh lemon juice
  • ¼ cup freshly grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prep your ingredients: peel and devein shrimp if needed, mince garlic, chop parsley, and rinse rice under cold water until clear.
  2. In a large skillet, melt 2 tablespoons butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden, being careful not to burn.
  3. Add rinsed rice to the skillet and stir to coat with garlic butter. Pour in chicken broth, season with salt and pepper, and bring to a gentle boil. Reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid absorbed.
  4. While rice cooks, season shrimp with salt and pepper. In a separate pan, melt remaining 2 tablespoons butter over medium-high heat and cook shrimp 2-3 minutes per side until pink and opaque. Remove from heat.
  5. Once rice is cooked, stir in heavy cream and lemon juice into the skillet. Add cooked shrimp back in and gently fold to combine. If using, sprinkle Parmesan cheese and mix until melted.
  6. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Remove from heat and garnish with fresh parsley before serving.

Notes

Keep heat low when adding cream to prevent curdling and stir gently to maintain silky sauce texture. If sauce is too thick, add a splash of broth or water to loosen without diluting flavor. Avoid overcooking shrimp to prevent rubbery texture. Toast rice slightly in butter and garlic before adding broth for nutty aroma and fluffiness.
