A quick and easy one-pan dinner that combines sweet honey with savory cheddar cheese and tender chicken breast. This creamy mac and cheese is perfect for busy weeknights and family dinners.

  • 2 large boneless, skinless chicken breasts
  • 2 cups freshly grated sharp cheddar cheese
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: Steamed broccoli florets, peas, or crispy bacon bits

Instructions

  1. Pat chicken breasts dry and season with salt, pepper, and smoked paprika. Heat butter in a large skillet over medium-high heat and cook chicken for 5-6 minutes per side until golden brown and cooked through (165°F). Remove chicken and let rest.
  2. Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  3. Sprinkle flour over the garlic and butter. Whisk constantly for about 1 minute to create a roux.
  4. Slowly pour in chicken broth and milk while whisking continuously to prevent lumps. Stir in honey until dissolved.
  5. Add dry elbow macaroni to the skillet. Pour in enough additional water or broth to just cover the pasta. Bring to a simmer, cover, and cook for 8-10 minutes until pasta is tender and liquid is absorbed.
  6. Remove the pan from the heat. Stir in grated cheddar cheese gradually until melted and smooth.
  7. Slice the rested chicken into strips or cubes. Add chicken and juices back to the skillet. Toss to coat everything in the sauce.
  8. Serve immediately, garnished with fresh parsley or cracked black pepper if desired.

Notes

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Pound chicken breasts to an even thickness for uniform cooking. Remove pan from heat before adding cheese to prevent breaking. If sauce is too thick, add a splash of milk or broth.
