  • 1 package (16 oz) potato gnocchi, fresh or frozen
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and sliced thin
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 cups fresh baby spinach, roughly chopped
  • ½ cup grated Parmesan cheese, plus extra for serving
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes
  • Optional: fresh parsley or basil for garnish

Instructions

  1. If chicken is not cooked, poach it gently in simmering water or broth for about 15 minutes until fully cooked (internal temperature 165°F). Let cool, then shred or cube.
  2. Heat olive oil and butter in a large soup pot over medium heat. Add diced onion, carrots, and celery. Cook 5-7 minutes until softened but not browned.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth. Stir in Italian seasoning, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  5. Add gnocchi directly to the pot. Cook 2-3 minutes until gnocchi float to the top.
  6. Add shredded chicken and stir gently to combine.
  7. Optional: Use an immersion blender to puree about half the soup for a creamier texture.
  8. Lower heat to medium-low. Stir in heavy cream and chopped spinach. Cook 3-4 minutes until spinach wilts and soup is heated through.
  9. Stir in grated Parmesan cheese until melted and incorporated.
  10. Serve hot, garnished with extra Parmesan and fresh herbs if desired.

Notes

Do not boil the soup after adding cream to prevent curdling; stir constantly and keep on low heat. Blending part of the soup is optional but adds creaminess without extra cream. If soup is too thick, add broth or milk to loosen. Use low-sodium broth to control saltiness. Fresh or refrigerated gnocchi cook quickly; avoid overcooking to prevent mushiness.
