  • 1 lb (450 g) potato gnocchi, store-bought or homemade
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 cup (240 ml) heavy cream
  • ½ cup (50 g) freshly grated Parmesan cheese
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 2 tablespoons chopped flat-leaf parsley
  • Salt and freshly ground black pepper, to taste
  • ½ cup (120 ml) chicken or vegetable broth, low-sodium
  • 1 tablespoon olive oil (optional)

Instructions

  1. Prep your ingredients: mince garlic, finely chop shallot and herbs, grate Parmesan, and measure cream and broth.
  2. Heat a large nonstick skillet over medium heat and melt butter until foamy but not browned.
  3. Add shallots and garlic; sauté gently for 2-3 minutes until fragrant and translucent, being careful not to burn the garlic.
  4. Add gnocchi and broth to the skillet; stir gently to coat gnocchi in butter and garlic.
  5. Cover skillet with a lid and steam gnocchi for 3-4 minutes until tender and floating.
  6. Remove lid and slowly pour in heavy cream; reduce heat to low and simmer gently for 4-5 minutes, stirring occasionally until sauce thickens.
  7. Stir in grated Parmesan and chopped herbs; season with salt and pepper to taste.
  8. If sauce is too thick, add a splash more broth or cream to reach desired consistency.
  9. Optional: For a slight golden crust, raise heat to medium-high for 1-2 minutes without stirring, watching carefully to prevent burning.
  10. Serve hot, garnished with extra parsley or Parmesan if desired.

Notes

Do not overcrowd the pan to avoid soggy gnocchi. Use fresh herbs for best flavor. Stir gently to prevent gnocchi from breaking. Freshly grated Parmesan melts better than pre-grated. For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with a vegan alternative. Leftovers keep well for up to 3 days; reheat gently with added broth or cream.
