A quick and easy one-pot creamy tomato pasta sauce that combines rich tomatoes, velvety cream, and pasta in a single dish for a comforting weeknight dinner.

  • 12 ounces (340 grams) penne or rigatoni pasta
  • 1 (28-ounce) can crushed tomatoes (preferably San Marzano)
  • 1/2 cup (120 ml) heavy cream
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, finely diced
  • 2 tablespoons unsalted butter
  • 1 cup (240 ml) low-sodium chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onion and cook for 5 minutes until soft and translucent.
  2. Add minced garlic and Italian seasoning; stir constantly for 1 minute until fragrant but not browned.
  3. Pour in crushed tomatoes and broth. Add dried pasta, breaking long noodles in half if necessary. Season with salt and pepper, then stir to submerge pasta.
  4. Bring mixture to a boil, then reduce heat to medium-low. Cover and simmer for 10-12 minutes, stirring every 3-4 minutes to prevent sticking.
  5. Check pasta for doneness (al dente). If liquid is gone but pasta is hard, add a splash of water or broth and cook 2-3 more minutes.
  6. Remove pot from heat. Stir in heavy cream and Parmesan cheese until smooth and creamy.
  7. Taste and adjust seasoning with salt and pepper. Garnish with fresh basil if desired and serve immediately.

Notes

Stir frequently to prevent the starch from burning at the bottom. If the sauce thickens too much upon standing, add a ladleful of hot water or broth to loosen it. For a lighter version, substitute half the cream with Greek yogurt. Gluten-free pasta can be used but may require closer monitoring to avoid mushiness.
