Quick and easy pan-seared salmon bites coated in crispy cornstarch and tossed in a creamy, spicy, and sweet bang bang sauce. Perfect for busy weeknights.

  • 1.5 pounds (680g) salmon fillets, cut into 1-inch cubes
  • ¼ cup (30g) cornstarch
  • 2 tablespoons (30ml) neutral oil (avocado or grapeseed)
  • Salt and black pepper to taste
  • ½ cup (120g) mayonnaise
  • 23 tablespoons (30-45ml) sriracha
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) white vinegar or rice vinegar
  • 1 teaspoon (5ml) soy sauce
  • ½ teaspoon garlic powder
  • 1 teaspoon (5ml) sesame oil

Instructions

  1. Pat salmon cubes completely dry with paper towels and season lightly with salt and pepper.
  2. Sprinkle cornstarch over salmon cubes and toss gently to coat lightly; shake off excess.
  3. In a small bowl, whisk together mayonnaise, sriracha, honey, vinegar, soy sauce, garlic powder, and sesame oil. Taste and adjust seasoning if needed.
  4. Heat neutral oil in a large non-stick skillet over medium-high heat until shimmering.
  5. Add salmon cubes to the pan in a single layer, ensuring not to overcrowd. Sear undisturbed for 3-4 minutes until a golden-brown crust forms.
  6. Gently flip the salmon bites and cook for another 2-3 minutes until cooked through and crispy on all sides (internal temperature 145°F/63°C). Remove from heat.
  7. Return salmon to the pan or transfer to a clean bowl. Pour the bang bang sauce over the hot salmon and toss gently to coat.
  8. Serve immediately, garnished with sesame seeds and chopped green onions.

Notes

Ensure salmon is completely dry before coating to maximize crispiness. Do not overcrowd the pan to prevent steaming. For a lighter version, substitute Greek yogurt for mayonnaise. Leftovers can be stored in the refrigerator for up to 2 days and reheated in an air fryer or skillet to maintain crispiness.
