Crispy Chicken Caesar Sandwich

A quick and satisfying sandwich featuring juicy, breaded chicken breast, creamy Caesar dressing, crisp romaine lettuce, and freshly grated Parmesan cheese on toasted bread. Perfect for a flavorful lunch or light dinner.

  • 2 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1/2 cup all-purpose flour (60 g)
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs (150 g), seasoned with 1 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper
  • Caesar dressing (homemade or store-bought)
  • Romaine lettuce, crisp and fresh
  • Freshly grated Parmesan cheese
  • 4 sandwich rolls or slices of bread (ciabatta or sourdough recommended)
  • Olive oil or vegetable oil for frying (about 1/4 inch depth)
  • Optional: fresh lemon juice for squeezing

Instructions

  1. Place each chicken breast between two sheets of plastic wrap and pound to about 1/2 inch (1.3 cm) thickness using a meat mallet or rolling pin.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with seasoned panko breadcrumbs.
  3. Dredge each chicken breast in flour, shaking off excess, then dip into the egg, and finally coat with the panko mixture, pressing gently to adhere.
  4. Heat about 1/4 inch of olive or vegetable oil in a large skillet over medium heat until shimmering (around 350°F / 175°C).
  5. Fry the chicken breasts for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Avoid overcrowding the pan.
  6. Remove chicken and drain on paper towels; let rest for a couple of minutes.
  7. Toast the sandwich rolls or bread slices until just golden.
  8. Spread about 2 tablespoons of Caesar dressing on the bottom half of each roll.
  9. Layer the crispy chicken breast on top of the dressing, add fresh romaine lettuce leaves, and sprinkle with 1 tablespoon of freshly grated Parmesan cheese.
  10. Optionally, squeeze fresh lemon juice over the filling for brightness.
  11. Place the top half of the bread on the sandwich, press gently, and serve immediately.

Notes

To keep the chicken crispy for meal prep, cool completely and store separately from bread and lettuce. Reheat in a 350°F (175°C) oven for 10 minutes before assembling. Do not overcrowd the pan when frying to maintain oil temperature and crispiness. Use fresh bread toasted lightly to prevent sogginess. Optional lemon juice brightens the sandwich and cuts through richness.
