A quick and easy weeknight dinner featuring cod fillets with a crispy garlic butter crust and bright lemon flavor. Perfectly tender, flaky fish with a golden crust that’s both light and indulgent.

  • 1.5 pounds cod fillets, skinless and boneless
  • 3 cloves garlic, finely minced or pressed
  • 3 tablespoons unsalted butter, melted
  • 1 large lemon, zested and juiced
  • 1/4 cup all-purpose flour (or almond flour/gluten-free blend for gluten-free option)
  • Salt and pepper, to taste
  • 1 small bunch fresh parsley, chopped (optional)
  • 1 tablespoon olive oil

Instructions

  1. Pat the cod fillets dry with paper towels. Season both sides generously with salt and pepper and let rest.
  2. In a small bowl, combine melted butter, minced garlic, lemon zest, and 1 tablespoon fresh lemon juice. Stir until mixed and set aside.
  3. Place flour in a shallow dish. Lightly coat each fillet in flour, shaking off excess.
  4. Heat a non-stick skillet or cast iron pan over medium heat and add olive oil. Once shimmering, add half of the garlic butter mixture and swirl to coat the pan surface without burning the garlic.
  5. Place the fillets in the pan and cook undisturbed for 3-4 minutes until edges turn golden and fish releases easily. Flip carefully.
  6. Pour the remaining garlic butter over the fillets and cook another 3-4 minutes until fish is opaque and flakes easily with a fork.
  7. Remove cod to a warm plate, spoon any remaining garlic butter from the pan over the fish, and sprinkle with chopped parsley.
  8. Serve immediately while crust is crispy and lemon aroma is fresh.

Notes

Pat cod dry to ensure crispiness. Avoid overcrowding the pan to maintain a golden crust. Watch garlic carefully to prevent burning. For thicker fillets, cover pan briefly after flipping to cook through. Leftovers reheat best in a skillet to keep crust crisp; avoid microwaving.
