Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the mini potatoes thoroughly.
  3. If potatoes are larger than bite-sized, halve or quarter them to ensure even cooking.
  4. In a large bowl, toss the potatoes with olive oil until evenly coated.
  5. Sprinkle cornstarch evenly over the potatoes and toss again to coat.
  6. Add garlic powder, smoked paprika, salt, and black pepper; toss to season evenly.
  7. Spread the potatoes in a single layer on a baking sheet, ensuring enough space between them.
  8. Roast in the preheated oven for 25-30 minutes, flipping halfway through for even browning.

Notes

For extra crispiness, toss potatoes with cornstarch before roasting and avoid overcrowding the baking sheet.
