A simple and flavorful recipe for crispy, golden chicken thighs seasoned with Old Bay, perfect for quick weeknight dinners or special occasions.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680 grams)
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil or avocado oil
  • Optional lemon wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, mix the Old Bay seasoning, salt, black pepper, garlic powder, and onion powder.
  4. Rub olive oil evenly over the chicken thighs, making sure to coat the skin well.
  5. Sprinkle the seasoning mix generously over the skin and underside of the thighs.
  6. Heat the cast iron skillet over medium-high heat for about 3-4 minutes until hot.
  7. Place the chicken thighs skin-side down in the skillet and press down lightly with tongs to ensure even contact.
  8. Cook without moving for 6-8 minutes until the skin is deep golden brown and crispy.
  9. Flip the chicken thighs over and transfer the skillet to the preheated oven. If your skillet isn’t oven-safe, transfer the chicken to a baking sheet skin-side up.
  10. Bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
  11. Remove from oven and let rest for 5 minutes before serving.
  12. Serve with optional lemon wedges.

Notes

Pat the chicken skin dry to ensure crispiness. Avoid overcrowding the pan to prevent soggy skin. If skin is not crispy enough after baking, finish under the broiler for 1-2 minutes watching carefully to avoid burning. Let the chicken rest before serving to retain juices.
