A quick and easy one-pan dinner featuring juicy chicken breasts coated in a crispy garlic parmesan crust, perfect for weeknights and family meals.

  • 1.5 pounds boneless, skinless chicken breasts, pounded slightly for even cooking
  • ¾ cup freshly grated parmesan cheese (about 75 g)
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • ½ cup plain or panko breadcrumbs (about 50 g)
  • 3 tablespoons unsalted butter, melted (about 45 g)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • 1 tablespoon fresh squeezed lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place each chicken breast between two sheets of plastic wrap and gently pound to about ½ inch (1.3 cm) thickness.
  3. In a shallow bowl, mix together grated parmesan, breadcrumbs, Italian seasoning, salt, and pepper until combined.
  4. Mince the garlic finely.
  5. Melt the butter with olive oil in a large oven-safe skillet over medium heat.
  6. Add the minced garlic to the melted butter and cook for 1-2 minutes until fragrant but not browned.
  7. Brush the garlic butter mixture generously onto both sides of the chicken breasts.
  8. Press the chicken breasts into the parmesan breadcrumb mixture, coating completely.
  9. Place the coated chicken breasts carefully in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  10. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  11. Remove the chicken from the oven and let it rest for 5 minutes before serving.
  12. Squeeze fresh lemon juice on top if desired.

Notes

Pat chicken dry before coating to ensure crispiness. Use fresh parmesan cheese for best crust texture. Avoid flipping chicken too often to keep the crust intact. If crust browns too fast on stove, lower heat. Do not overcrowd the pan. For gluten-free, substitute breadcrumbs with almond flour or gluten-free panko. Let chicken rest 5 minutes after baking. Reheat leftovers in oven to maintain crispiness.
