  • 2 medium zucchinis, sliced into ½-inch thick rounds or half-moons
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt to taste (about 1 teaspoon)
  • Black pepper to taste (about ½ teaspoon)
  • Pinch of red pepper flakes (optional)
  • Chopped fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed sheet pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, pepper, and red pepper flakes if using.
  3. Pat chicken thighs dry with paper towels. Add chicken to the bowl and toss well to coat evenly. Let sit for 5 minutes.
  4. Slice zucchini into ½-inch rounds or half moons. Add zucchini to the bowl with the chicken marinade and toss gently to coat.
  5. Arrange chicken thighs skin side up on one half of the sheet pan, spaced apart to avoid steaming. Arrange zucchini in a single layer on the other half.
  6. Bake for 25-30 minutes. At about 15 minutes, use tongs to flip the zucchini pieces for even roasting. Chicken skin should be golden and crispy, zucchini tender with browned edges.
  7. Optional: Broil for 2-3 minutes if you want extra crispy chicken skin, watching carefully to avoid burning.
  8. Remove from oven and let chicken rest for 5 minutes. Sprinkle chopped fresh parsley or basil over chicken and zucchini before serving.

Pat chicken skin dry before marinating to ensure crispiness. Avoid overcrowding the pan to allow heat circulation. Flip zucchini halfway through baking for even roasting.
