A quick and easy 30-minute weeknight dinner featuring tender cod fillets coated in a shatteringly crisp cornstarch crust and tossed in a glossy, savory-sweet honey soy glaze.

Ingredients

  • 1.5 lbs fresh or thawed cod fillets, patted dry
  • 1/2 cup cornstarch
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup vegetable oil (for frying)
  • 1/3 cup pure honey
  • 1/4 cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • Pinch of red pepper flakes
  • 2 stalks green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Pat cod fillets completely dry with paper towels. Season lightly with salt and pepper.
  2. In a shallow bowl, whisk the egg with 1 tablespoon of water to create an egg wash.
  3. Place cornstarch in a separate shallow dish. Dip each piece of fish into the egg wash, letting excess drip off, then press firmly into the cornstarch to coat both sides. Shake off excess.
  4. Heat vegetable oil in a heavy-bottomed skillet over medium-high heat until it reaches 350°F.
  5. Carefully place coated fish into the hot oil in batches (do not overcrowd). Fry for 2-3 minutes per side until golden brown and crispy.
  6. Remove fried fish to a wire rack set over a baking sheet to keep warm and drain excess oil.
  7. In the same skillet (remove excess oil if needed), combine honey, soy sauce, garlic, ginger, rice vinegar, and red pepper flakes. Whisk over medium heat.
  8. Bring the sauce to a simmer and cook for 2-3 minutes until it thickens slightly and coats the back of a spoon.
  9. Toss the fried cod in the warm glaze to coat evenly. Return to the pan for 30 seconds to let the sauce set.
  10. Remove from heat, garnish with sliced green onions, and serve immediately.

Notes

Ensure fish is completely dry before dredging to achieve maximum crispiness. Do not overcrowd the pan when frying; cook in batches if necessary. Toss fish in sauce just before serving to maintain the crunch. For a gluten-free version, substitute soy sauce with tamari.
