  • 46 pieces cube steak (thinly pounded)
  • 1 can (10.5 oz / 298 g) cream of mushroom soup
  • 1 cup (240 ml) beef broth (low-sodium optional)
  • 1 packet (about 1 oz / 28 g) onion soup mix
  • 1/2 cup (120 g) sour cream (or Greek yogurt as substitute)

Instructions

  1. Optional: Lightly season cube steaks with salt and pepper and sear in a hot skillet with a bit of oil for 1-2 minutes per side.
  2. Place cube steaks in a single layer at the bottom of the crockpot.
  3. Sprinkle the onion soup mix evenly over the steaks.
  4. Pour the cream of mushroom soup over the steaks, then add the beef broth. Do not stir.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until steak is tender and gravy thickens slightly.
  6. About 15 minutes before serving, gently stir in the sour cream until fully incorporated. Avoid cooking after adding sour cream for too long.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve hot over mashed potatoes, buttered egg noodles, rice, or your preferred side.

Notes

Searing the cube steak before slow cooking adds extra flavor but is optional. Add sour cream at the end to avoid curdling. If gravy is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into crockpot 30 minutes before serving to thicken. Resist stirring frequently during cooking to maintain tenderness.
