  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil or olive oil
  • 2 cups beef broth (low sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 1 package (about 1/4 cup) onion soup mix
  • 2 tablespoons butter
  • Optional: pinch of dried thyme or parsley

Instructions

  1. Pat the cube steak pieces dry with paper towels and season both sides generously with salt and pepper.
  2. Place the all-purpose flour in a shallow dish and dredge each piece of cube steak evenly, shaking off excess flour.
  3. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Brown the cube steak pieces for about 2 minutes per side until golden. Transfer to the crockpot.
  4. In the same skillet, melt 2 tablespoons of butter. Add the onion soup mix and stir for about 30 seconds until fragrant.
  5. Pour in 2 cups beef broth and 2 tablespoons Worcestershire sauce, scraping up browned bits. Simmer for 2-3 minutes to reduce slightly.
  6. Pour the broth mixture over the cube steak in the crockpot. Sprinkle a pinch of dried thyme or parsley if desired.
  7. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the steak is tender and gravy thickened.
  8. If gravy is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the crockpot. Cook on high for 15 minutes until thickened.
  9. Serve hot over mashed potatoes, rice, or buttered noodles.

Notes

Browning the cube steak before slow cooking adds caramelized flavor and helps thicken the gravy. Avoid lifting the crockpot lid during cooking to maintain heat. Use low-sodium beef broth for better control of saltiness. For thicker gravy, use a cornstarch slurry near the end of cooking.
