  • 6 cups day-old bread, cubed (brioche or challah preferred)
  • 8 ounces cream cheese, softened
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Optional: 1 tablespoon espresso
  • Optional: 1 cup fresh raspberries or cherries
  • Optional: 1/2 cup chopped toasted pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Cube the bread into roughly 1-inch pieces. If fresh, toast lightly for 5–7 minutes to dry slightly.
  3. In a medium bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  4. In a large bowl, whisk together eggs, whole milk, heavy cream, vanilla extract, salt, and optional espresso until smooth.
  5. Slowly add the cream cheese mixture into the egg custard, whisking continuously to prevent lumps.
  6. Place bread cubes into the prepared baking dish. Sprinkle chocolate chips evenly over the bread.
  7. Gently pour the custard mixture on top, ensuring all bread is soaked. Press down lightly with a spatula.
  8. Let the pudding rest for 10 minutes at room temperature to allow soaking.
  9. Bake uncovered for 45–50 minutes until the top is golden brown and custard is set but slightly jiggly in the center.
  10. Remove from oven and cool on a rack for at least 15 minutes before serving.

Notes

For extra gooey chocolate pockets, add half the chocolate chips before soaking and sprinkle the rest halfway through baking. Use sturdy bread like brioche or challah for best texture. Toast fresh bread lightly to prevent sogginess. You can prepare the pudding the night before and refrigerate; add 10 extra minutes to baking time when baking from cold.
