  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¾ cup (150g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • ¾ cup (180ml) whole milk, room temperature
  • 1 teaspoon vanilla extract
  • Cinnamon sugar coating: ½ cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large bowl, whisk granulated sugar with melted butter until combined but not too cool. Add eggs one at a time, whisking after each addition until smooth.
  4. Stir in milk and vanilla extract until well mixed.
  5. Pour the dry ingredients into the wet mixture. Gently fold with a spatula until just combined, leaving some lumps for fluffiness.
  6. Divide the batter evenly among the 12 muffin cups, filling about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean and tops are golden brown.
  8. While muffins bake, mix ½ cup granulated sugar with 1 tablespoon ground cinnamon in a shallow bowl.
  9. Let muffins cool in the pan for about 5 minutes, then remove each and immediately toss in the cinnamon sugar mixture until fully coated.
  10. Transfer coated muffins to a cooling rack to cool completely. Best enjoyed slightly warm.

Notes

Do not overmix the batter to keep muffins fluffy. Coat muffins immediately after baking while warm for the best cinnamon sugar crust. Use room temperature ingredients for best results. For dairy-free, substitute milk with almond or oat milk and butter with coconut oil. For gluten-free, use a 1:1 gluten-free baking flour blend.
