Instructions

  1. Rinse the rice under cold running water until it runs clear to remove excess starch (about 2 minutes).
  2. In a medium saucepan, combine 1 cup full-fat coconut milk, 1 cup water, and 1/2 teaspoon salt. Stir to combine. Add 1 teaspoon sugar if using.
  3. Add the rinsed rice to the saucepan and stir gently to distribute evenly.
  4. Place the saucepan over medium-high heat and bring the mixture to a gentle boil (about 5 minutes).
  5. Reduce heat to low, cover tightly with a lid, and simmer gently for 15 minutes without lifting the lid.
  6. Turn off the heat and let the rice rest covered for another 10 minutes to finish cooking with steam.
