  • 8 large egg whites (about 1 cup or 240 ml liquid egg whites)
  • ½ cup (50 g) shredded cheese (cheddar, mozzarella, or your favorite)
  • 2 tbsp fresh herbs, chopped (chives, parsley, or basil)
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp baking powder
  • ½ cup (75 g) finely diced vegetables (optional: bell peppers, spinach, mushrooms)
  • Olive oil or non-stick spray (for greasing muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your muffin tin with olive oil or non-stick spray.
  2. Separate the egg whites from yolks, ensuring no yolk is included. Use about 8 large whites or 1 cup (240 ml) liquid egg whites at room temperature.
  3. Whip the egg whites with ¼ tsp baking powder using a whisk or electric mixer until soft peaks form (3-5 minutes).
  4. In a separate bowl, mix shredded cheese, chopped herbs, salt, pepper, and optional vegetables.
  5. Gently fold the cheese and vegetable mixture into the whipped egg whites using a spatula, being careful not to deflate the whites.
  6. Divide the mixture evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 15-18 minutes until the bites puff up and turn lightly golden. A toothpick inserted should come out clean.
  8. Let the bites cool in the pan for 5 minutes before carefully removing them with a butter knife or small offset spatula.

Notes

Use a clean, dry bowl to whip egg whites for best volume. Fold gently to keep the mixture airy. Cook vegetables lightly before adding to reduce moisture. These bites reheat well in the microwave for 20-30 seconds and freeze well for up to 2 months.
