Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners or lightly grease the cups.
  2. In a medium bowl, sift together the flour and cocoa powder. Add sugar and stir until evenly combined.
  3. Melt the butter gently until fully liquid but not browned. Let it cool slightly.
  4. In another bowl, whisk the eggs until slightly frothy. Slowly add the melted butter while whisking continuously.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes. Check doneness by inserting a toothpick into the center; it should come out with a few moist crumbs.
  8. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
