A quick and flavorful Mediterranean-inspired flatbread pizza featuring marinated chicken, creamy tzatziki, fresh veggies, and melty cheeses. Perfect for easy family dinners or casual get-togethers.

  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 cloves garlic, minced
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 large store-bought flatbreads (810 inches in diameter)
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 small cucumber, thinly sliced or diced
  • 1/2 cup kalamata olives, pitted and halved
  • 1 small red onion, thinly sliced
  • Fresh parsley or dill, chopped, for garnish
  • 1/2 cup Greek yogurt (full-fat)
  • 1/4 cup grated cucumber, squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add the thinly sliced chicken and toss to coat evenly. Let marinate for 10-15 minutes.
  2. Preheat the oven to 425°F (220°C) and place a baking sheet or pizza stone inside to heat.
  3. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber (squeezed dry), garlic, lemon juice, dill, salt, and pepper in a small bowl. Refrigerate until serving.
  4. Heat a skillet over medium-high heat. Cook the marinated chicken slices until fully cooked and slightly browned, about 5-7 minutes. Remove from heat.
  5. Place the flatbreads on the preheated baking sheet. Spread shredded mozzarella evenly over each flatbread, then top with cooked chicken slices. Sprinkle crumbled feta, sliced cucumbers, olives, and red onion evenly.
  6. Bake in the oven for 8-10 minutes until cheese melts and flatbread edges turn golden and crispy. Watch closely after 8 minutes to prevent burning.
  7. Remove from oven and let cool for a minute. Drizzle or dollop tzatziki sauce on top and sprinkle with fresh parsley or dill. Slice into wedges and serve immediately.

Notes

Do not overload flatbread with toppings to avoid sogginess. Squeeze cucumber moisture out for tzatziki to prevent watery sauce. Marinate chicken for about 15 minutes for best flavor without ‘cooking’ the meat. Use a hot oven and preheated baking sheet or pizza stone for crispy flatbread. Optionally broil 1-2 minutes for extra crispness but watch carefully to avoid burning.
