  • 2 cups canned kidney beans, drained and rinsed

  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Heat a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 7-8 minutes. Drain excess fat if necessary.
  2. Add the can of diced tomatoes with juices and the beef broth to the pot. Stir to combine.
  3. Season the stew with smoked paprika, salt, and black pepper. Mix well.
  4. Drain and rinse the canned kidney beans, then gently fold them into the pot, being careful not to mash them.
  5. Reduce heat to low, cover the pot with a lid slightly ajar, and let the stew simmer for 45-60 minutes, stirring occasionally.
