  • 1 cup (120 grams) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons (85 grams) cold unsalted butter, cubed
  • 1/2 cup (120 ml) milk (whole or 2%)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the frozen peaches with granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, nutmeg, and a pinch of salt until evenly coated.
  3. Transfer the peach mixture to a greased 9×9 inch baking dish and spread evenly.
  4. In a medium bowl, whisk together flour, baking powder, and salt.
  5. Cut in the cold butter using a pastry cutter or forks until the mixture resembles coarse crumbs with some pea-sized bits.
  6. Stir in milk and vanilla extract just until the dough comes together; it should be soft but not sticky.
  7. Drop large spoonfuls of the biscuit dough evenly over the peach filling.
  8. Bake for 40-45 minutes or until the topping is golden brown and the filling is bubbly.
  9. Let the cobbler cool for about 10 minutes before serving to allow the filling to thicken.

Keep the butter cold for a flaky topping. Don’t overmix the dough to avoid tough biscuits. Use fresh lemon juice to brighten flavors. Tent foil if topping browns too fast.
