  • 2 medium sweet potatoes, peeled and cubed (about 3 cups)
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced into strips
  • 1 small red onion, sliced into wedges
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and smoked paprika to make the honey garlic glaze.
  3. Peel and cube the sweet potatoes into roughly 1-inch pieces. Trim the green beans and slice the red bell pepper and red onion into bite-sized strips and wedges.
  4. Toss all the vegetables with olive oil, salt, pepper, and the honey garlic glaze until evenly coated.
  5. Spread the glazed vegetables in a single layer on a rimmed baking sheet. Nestle the sausage slices evenly across the pan without overlapping.
  6. Roast in the preheated oven for 25-30 minutes, flipping the sausage and stirring the vegetables halfway through (around 15 minutes) to ensure even browning.
  7. Check that the sweet potatoes are fork-tender and the sausage has golden-brown edges. If needed, roast for an additional 5 minutes, watching carefully to avoid drying out the sausage.
  8. Let the pan rest for a few minutes before serving to allow the glaze to thicken slightly.

Notes

Use firm smoked sausage like kielbasa for best texture. To prevent garlic from burning, add it halfway through roasting or use garlic powder. Lining the sheet pan with parchment paper or a silicone baking mat helps with cleanup. For a crunchier topping, sprinkle toasted sesame seeds or chopped fresh parsley before serving. Adjust honey amount to taste or substitute part with maple syrup for less sweetness. Room temperature sausage roasts more evenly.
