A quick and easy homemade snack featuring a flavorful blend of extra virgin olive oil, garlic, and herbs, perfect for dipping crusty bread or veggies.

  • ½ cup (120 ml) extra virgin olive oil
  • 2 cloves garlic, finely minced or pressed
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 tablespoon fresh parsley or rosemary, chopped
  • Pinch or two of red pepper flakes (optional)
  • Zest of half a lemon
  • Salt and black pepper to taste
  • 1 teaspoon balsamic vinegar (optional)

Instructions

  1. Peel and finely mince 2 cloves of fresh garlic. For a milder flavor, gently crush and let sit for 5 minutes before mixing.
  2. In a small bowl, pour ½ cup (120 ml) extra virgin olive oil. Add 1 teaspoon dried Italian herbs and 1 tablespoon chopped fresh parsley or rosemary. Stir gently to combine.
  3. Stir in the minced garlic, red pepper flakes (if using), lemon zest, and a pinch of sea salt and black pepper. Mix well.
  4. Add 1 teaspoon balsamic vinegar if desired and stir gently.
  5. Cover the bowl and let the mixture sit at room temperature for 10-15 minutes to allow flavors to meld.
  6. Pour the dip into a serving bowl and serve with warm crusty bread or your preferred dipping choice.

Notes

For a more intense flavor, prepare the dip a few hours ahead and refrigerate, then bring to room temperature before serving. Adjust garlic and red pepper flakes to taste to avoid overpowering flavors. Use fresh lemon zest for best results. Olive oil may solidify in the fridge; bring to room temperature before serving.
