  • 1 ripe avocado
  • 1 cucumber, sliced into thin half-moons
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 cup cooked chickpeas, drained and rinsed
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey (or maple syrup for vegan option)
  • Salt, to taste
  • Black pepper, freshly cracked, to taste

Instructions

  1. Rinse mixed greens thoroughly and spin dry or pat with a clean towel.
  2. Slice the cucumber into thin half-moons, halve cherry tomatoes, and thinly slice the red onion.
  3. Chop the parsley and cilantro finely.
  4. Cut the avocado in half, remove the pit, and slice or cube the flesh gently.
  5. In a small jar or bowl, combine olive oil, lemon juice, honey, salt, and pepper. Shake or whisk vigorously until creamy and well blended.
  6. Rinse and drain canned chickpeas well to avoid watery salad.
  7. In a large mixing bowl, combine greens, cucumber, tomatoes, red onion, herbs, chickpeas, and avocado gently.
  8. Pour the dressing over the salad and toss lightly to coat all ingredients evenly, being careful not to mash the avocado.
  9. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  10. Serve immediately for the freshest flavor and crisp texture.

Notes

Use ripe but firm avocado to avoid mushiness. Soak sliced onions in cold water for 5 minutes to mellow sharpness. Emulsify dressing well for better coating. Toss salad gently to keep avocado intact.
