Juicy Garlic Butter Grilled Shrimp

A quick and easy grilled shrimp recipe featuring a rich garlic butter sauce with a hint of smoked paprika, perfect for summer BBQs and packed with juicy, flavorful shrimp.

  • 1 pound large shrimp (1620 count), peeled and deveined
  • 4 tablespoons unsalted butter
  • 45 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon smoked paprika (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a small saucepan over low heat, melt 4 tablespoons of unsalted butter.
  2. Add 4-5 minced garlic cloves and cook gently for 2-3 minutes until fragrant but not browned.
  3. Stir in 2 tablespoons fresh lemon juice, 1/2 teaspoon smoked paprika, and a pinch of red pepper flakes if using. Remove from heat and set aside.
  4. Place 1 pound of peeled and deveined large shrimp into a mixing bowl.
  5. Pour half of the garlic butter sauce over the shrimp and toss gently to coat.
  6. Season with salt and freshly ground black pepper to taste.
  7. Let marinate for 10-15 minutes at room temperature.
  8. Preheat the grill or grill pan to medium-high heat (around 400°F). Lightly oil the grates or pan to prevent sticking.
  9. Thread the marinated shrimp onto skewers, about 4-5 per skewer, keeping them snug but not squished.
  10. Place skewers on the hot grill and cook for about 2-3 minutes per side, brushing with remaining garlic butter sauce as you go.
  11. Look for firm, opaque shrimp with slight char marks. Avoid overcooking.
  12. Remove shrimp from grill and drizzle any leftover garlic butter sauce on top.
  13. Sprinkle with freshly chopped parsley for color and freshness.
  14. Serve immediately, ideally with grilled veggies or a light salad.

Notes

Do not overcook shrimp to avoid rubbery texture. Marinate shrimp for no longer than 15 minutes to prevent the lemon juice from cooking the shrimp. Baste shrimp with garlic butter sauce during grilling to keep them juicy and flavorful. Soak wooden skewers for at least 30 minutes before use to prevent burning. Let shrimp rest for 5 minutes after grilling to redistribute juices.
