  • 1 pound (450g) ground turkey
  • 12 ounces (340g) fresh green beans, trimmed and halved
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated or finely minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil or avocado oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup water or chicken broth
  • 2 stalks green onions, thinly sliced for garnish

Instructions

  1. Rinse and trim the ends of the green beans, then cut in half crosswise. Set aside.
  2. In a small bowl, combine soy sauce, oyster sauce, and sesame oil. Set aside to let the flavors meld.
  3. Place a large non-stick skillet or wok over medium-high heat. Add the vegetable oil and let it warm until shimmering but not smoking.
  4. Add minced garlic and ginger to the oil. Stir quickly for about 30 seconds until fragrant, being careful not to burn.
  5. Add the ground turkey in one even layer. Let it brown without stirring for 2 minutes, then break it up and continue cooking until no pink remains and turkey is juicy, about 5-6 minutes total. Season lightly with salt and pepper during cooking.
  6. Toss in the green beans with the turkey, stirring well to combine flavors. Pour in the water or broth and cover the pan. Let the beans steam for 4-5 minutes until crisp-tender.
  7. Remove the lid, stir in the prepared sauce and red pepper flakes if using. Cook for another 1-2 minutes, stirring often until the sauce thickens slightly and coats everything.
  8. Remove from heat and sprinkle with sliced green onions. Serve hot with steamed rice or your favorite grain.

Notes

If turkey dries out during cooking, add a splash of broth or more oil to keep it juicy. Avoid overcooking green beans to maintain their crispness. Frozen green beans can be used if thawed and drained well. For gluten-free, substitute tamari for soy sauce and use a mushroom sauce instead of oyster sauce if needed.
