  • 4 tbsp unsalted butter, softened
  • 1 ½ cups tomato sauce
  • ¾ cup heavy cream
  • 2 tbsp garam masala

Instructions

  1. Pat dry 2 lbs boneless, skinless chicken thighs and cut into 1.5-inch bite-sized pieces.
  2. In a mixing bowl, toss chicken pieces with 2 tbsp garam masala until evenly coated.
  3. Place the spiced chicken evenly in the crockpot.
  4. Pour 1 ½ cups tomato sauce over the chicken and dot with 4 tbsp softened butter.
  5. Cover and cook on low for 4 to 6 hours, or on high for 2.5 to 3 hours.
  6. About 15 minutes before serving, stir in ¾ cup heavy cream until fully combined.
  7. Gently stir the sauce and taste; add salt or a pinch of sugar if needed.
  8. Serve hot over steamed basmati rice or warm naan bread.

Notes

Do not open the crockpot frequently during cooking to avoid heat loss. Use chicken thighs for juiciness. Stir in heavy cream near the end to prevent curdling.
