  • 1 pound (450g) boneless, skinless chicken breasts or thighs
  • 2 tablespoons extra virgin olive oil
  • 2 medium bell peppers, mixed colors, sliced
  • 1 medium red onion, thinly sliced
  • 1 cup (150g) cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1/4 cup (40g) Kalamata olives, pitted and halved (optional)
  • A handful of fresh parsley or basil, chopped

Instructions

  1. Slice the chicken into 1-inch (2.5 cm) pieces. Thinly slice bell peppers and red onion. Halve cherry tomatoes and mince garlic.
  2. Heat a large non-stick or cast-iron skillet over medium-high heat and add 2 tablespoons of olive oil. Heat until shimmering but not smoking, about 1-2 minutes.
  3. Add the chicken pieces in a single layer. Let them brown on one side for 3-4 minutes before stirring to sear the other side. Season with salt, pepper, dried oregano, and cumin while cooking.
  4. Add minced garlic and sliced onions once the chicken is halfway cooked. Stir frequently and cook for 2 minutes until fragrant and slightly softened.
  5. Add sliced bell peppers and stir well. Cook for another 4-5 minutes, stirring occasionally so the peppers soften but remain crisp.
  6. Add halved cherry tomatoes and Kalamata olives. Stir gently and cook for 2-3 minutes until tomatoes release their juices, creating a light sauce.
  7. Remove the skillet from heat and squeeze fresh lemon juice evenly over the dish. Toss in chopped parsley or basil and give a final stir.
  8. Serve immediately while warm and juicy.

Notes

Do not overcrowd the pan to ensure proper searing. Use room temperature chicken and pat dry before cooking. Add lemon juice off the heat to keep bright flavor. Stir cherry tomatoes gently to avoid bursting. Optionally add crumbled feta or tzatziki for extra richness. Can swap chicken for shrimp, turkey, or tofu for variations.
