Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. Mash the ripe bananas in a medium bowl using a fork or potato masher until smooth but still a bit chunky.
  3. In the banana bowl, add melted butter, sour cream, sugar, eggs, and vanilla extract. Whisk gently until combined.
  4. In a separate large bowl, whisk together all-purpose flour, baking soda, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Avoid overmixing.
  6. If using, fold in the chopped nuts gently.
  7. Pour the batter evenly into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if the top browns too quickly.
